In his book "In Defense of Food, Michael Pollan traces the deterioration of American power in 1977, when the dietary recommendations became the policy. A well-meaning Senator George McGovern had introduced the "Dietary Guidelines for America," "Regretting that the American diet has become full of fatty meats and sugary drinks that caused the disease.
The report started a storm because all foods have a powerful lobby. Discussion of real food must be mitigated to include only simple food. It is politically incorrect, for example, distinguish between beef, chicken or fish. As in any manufacturing process gained through greater efficiency, our race supplies the cheapest form of calories: The grains that could be mass produced and cheap calories fertilized. No more greens ever needed to enter our food chain. We can always add vitamins to strengthen manufactured products that meet government recommendations.
But the food is much more complex that nutrients limited collection is currently understood. Each blueberry contains dozens and dozens of anti-oxidant balance for hundreds of generations of natural selection. This is not the same as corn syrup flavored cranberries, high fructose corn supplemented with unique chemical entity known as vitamin C.
The reductionist approach of food as a group of nutrients produced broke the longstanding relationship between food and nature. For an eternity, the act of preparing and eating Food was the first and the basic interface between our physical body and the nature that sustains us and which we belong.
When food is in summary, the food itself is complex, and we were reminded that each trip to the market of our links with the natural world and the realm where our food. The food was something we can identify an apple, a banana, a chicken leg.
Now, the food chain, the product is manufactured, along with many participants as many places, since we have no idea where the ingredients in the cereal box we had for breakfast really came. We no longer know what we eat. He comes from a complex supply chain from around the world, a streamlined supply chain by market forces for the long platform and high margins, not for human health.
Michael Pollan advice is to stop nutrients processed and manufactured to take a step back to nature: "eat, too, mostly plants." Sounds like good advice for me.
